Living abroad as a student can be an exciting yet challenging adventure, especially when it comes to cooking for yourself. If you have little experience in the kitchen and few ingredients, don’t worry! There are plenty of easy and delicious recipes that can be made with minimal ingredients and equipment. Here three easy and tasty meals from morning to night!

BREAKFAST: Greek Yogurt and Fruit Parfait 🍓

Ingredients:

  • 1 cup Greek yogurt (plain or flavored)
  • 1 cup fresh fruit (berries, sliced banana, or diced apple)
  • 1/4 cup granola or nuts (optional)

In a bowl or a glass, layer half of the Greek yogurt.Add half of the fruit on top of the yogurt layer. If using, add a layer of granola or nuts. Repeat the layers with the remaining yogurt, fruit, and granola/nuts.

LUNCH: Avocado and Egg Toast 🥑 🍳

Ingredients:

  • 1 ripe avocado
  • 1 egg
  • 1 slice of bread
  • Salt and pepper, to taste
  • Optional toppings: red pepper flakes, hot sauce, or everything bagel seasoning

Toast the bread to your desired level of crispiness. Cut the avocado in half, remove the pit, and scoop out the flesh. Mash the avocado in a small bowl and season with salt and pepper. In a pan, cook the egg to your preferred doneness. Spread the mashed avocado onto the toast, then place the fried egg on top. Add any optional toppings and enjoy!

DINNER: Spaghetti Aglio e Olio e Peperoncino 🧄 🌶️

Ingredients:

  • 8 oz spaghetti
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions:

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for 1–2 minutes until fragrant. Add the cooked spaghetti to the skillet and toss to coat with the garlic and oil mixture. Enjoy!
